Also remember it's not so much a "stun ring" so much as you are seeing the laser bolt come directly at you and then leave your field of vision. Remember they had to do it in a way that you could still see what was going on (if they used a solid bolt of blue, the whole picture would be blue and thus unwatchable).
That's right. The stun shot looks perfect now (with the portion of her clothing that wasn't blue colored in). It's the same effect we see in ANH when the Imp Commando is shooting directly at the screen (red "rings") before he's gunned down by Han and Luke. So we could imagine that ST Rifle stun blasts probably look just like blue bolts, ANH-style.
The "ion canon shots are blue" thing is just a video game convention.
If ion shots were suddenly blue that would just be more confusing, because the Prequels give us blue blaster and turbolaser shots... which are just like the red and green ones, just a different color (ditto with the purple ones).
The new The Clone Wars CGI show gives us an "ion cannon" that is a big purplish ring, something we've never seen before (or since). But I wouldn't let that EU crap effect the look of the OT, no way!
It's obvious that the Ion Cannon in ESB is a different sort of weapon than a normal turbolaser. It is given a new name, big setup and it looks like this giant elaborate piece of tech. And we see the effects it has on the ISD in graphic detail. There's no reason to rub it in just to satisfy some people who played some old video games... (regardless of how classic those games were)
It'd be sort of like making the Death Star laser blue.... after all, we see blue beams used in ROTS, so somebody could try to argue it should be that color. But it's perfectly fine being green!
I say nay on anyone suggesting Chewbacca's bowcastor fire green bolts either (the first place that appeared was in Dark Forces II: Jedi Knight, and in case anyone is curious it was because this was a weapon modified by the Grave Tuskens that Kyle was fighting, and this was several years after ROTJ...). We do see a green bolt firing "crossbow" in ROTS, but it appears to be a different weapon (more like a chopper mounted machinegun) than the one chewie used. The whole EU thing about it being a "cocked" weapon that fires "quarrells" is completely unsupported in the movies. All Chewie's weapon is, is a blaster rifle (firing red shots) that happens to be shaped like a crossbow.

PS: Why the push to insert the Lambda shuttle into ESB? It seems like a waste to use such a huge, unwieldy vehicle just to have Needa take a trip over to apologize. Every other time a shuttle was used it was for somebody important (Vader, Emperor) or was hauling a crew with equipment (Han & co.).
