I’m going through converting old VHS tapes to DVD and I found a showing of Jaws on TNT that was hosted by Roy Scheider. I looked up the different versions on DVDCompare.net and don’t see anything specific about it. I have the older DTS release which only has 10 deleted scenes and 2 outtakes. Is this something worth preserving and is anyone interested in it?

Unless there's something different about the film, you could probably save yourself some work and just preserve his hosting bits.

I agree. If there are no noticeable changes, other than being edited down for television, I'd say the host segments would be the real gem here. I'd sure like to see it.
