Personally, I always thought Anakin's character arc should've been exactly opposite. He should've started as a mature, noble, selfless, likeable character, and transform into an evil villain. Yes, you hit the nail on the head with that one. Darth Vader was a very strong villain and inspired tragic thoughts. My perfect idea of Anakin was exactly like yours. If I try to think of the Anakin we got while watching the originals it turns Darth Vader into a real whiny weakling in my perception.
I have recently entertained the idea that Palps just beat the hell out of Vader everytime he displeased him. After years of being lightninged everytime he shows mercy or does something less than perfectly, he grows cold and hard and adopts some of the same strategies as his master. I would of liked to see the prequels play up the "father and son" relationship between Palps and Anakin more. It would make the turn more believable
