If I'm not mistaken they ended up being the long shots of Luke and 3p0 in the landspeeder (which I guess were originally to include some close-ups of Mark). They were shot in the desert in California or Nevada I believe. I think I read in the new "making of" book that he had the accident the night before he was scheduled to shoot the scenes.

I think "Skywalking" expands on this a bit, though it's a decade since I read it, could be wrong.

I've always suspected that the shot of Luke lying by the speeder, head away from camera, is a double since when Ben turns up for the 2-shot Luke's head is in a different position (IIRC). It's pretty common to use doubles anyway for shots where they can give the "major talent" some time off because we can't see their face. So it might not be related to Hamill's injury.
