Then I click on expert and select Highest Quality (or somthing like that) then I make sure that I also set the video as CBR. Now for audio I like to set the Bitrate to 192 and then once I have a final version I run that file through Video Enhancer at highest quality settings (and take a vacation with my Laptop).

That isn't exactly the best way to go about it. Using Mpeg1 can seriously deteriorate the quality of the video. This might explain why your snapshots of your Holiday special look so pixilated, Bob. It would be better to convert the holiday special to lossless avi (my choice is the Lagaryth codec) and use Vegas to edit. this way you won't lose any quality, plus vegas would only render the sections that have been edited with wipes etc. all other stuff it doesn't re-encode so the time for final render is cut greatly.. You need a good sized hard drive with a lot of space but the results would be worth it. once you have finished the edit then you export it as lossless avi and use a different program to encode it to mpeg2 ready for the DVd (vegas' mpeg encoder isn't too good). i use CinemaCraft Encoder to do all my mpeg rendering as it is by far the best encoder out there.

setting up vegas is pretty easy and it has perfect wipes & fades for any star wars edit but it all depends on the video you are editing as to what settings you need to change. but i could help with that is needed

Also, I think I might rip the star field from one of the GOUT dvds crawl and loop it for a minute, as long as there's no real discernible movement, and use it as the background for the opening crawl/credits as well as a new reconstructed end credits, maybe done to match the credits of the movies?

You don't need to loop the video. All you need to do is take a snapshot of the plain starfield in vegas or your software dvd player and use the still image for the background.
