A story I heard about 2001 was that they were using Blue Danube to edit to and Kubrick liked it so much that's how it stayed. Dunno about the rest of the 2001 score, I'm not familiar with it.

And Lucas was in awe of 2001 according to page 142 of Skywalking ... but he considered it too obscure and downbeat. The quote about the production design and the camera lingering on it must be from another source.
