By the time we get to ROTJ (to me anyway), it seems like the Alliance has pulled together for one mass-attack. That's why you see more diversity there - everyone has gotten together to work as one mass space navy, rather than small guerilla warrior pockets (of likely less diverse groups).
Excellent point. I think that "reality" as it were often gets overlooked in Star Wars; I think your assessment of the situation in ANH is bang on.
As a side note, it's funny -- you'd think seeing more aliens, as in the PT, would have made the galaxy seem like a bigger place, but in my opinion it's just the opposite. In the OT, by seeing just one group (humans) dealing with their issues, and
occasionally seeing aliens, it makes your imagination kick in and start wondering about all the other creatures and planets out there with stories of their own. In the PT, by contrast, every race is everywhere and dealing with the same issues, which seems to diminish the vastness of that universe. Plus, as dumb_kid pointed out, having predominantly human characters makes the story much more relatable.
