If she didn't know she was adopted, then a description of Mrs. Organa would be a natural response to that question.
Except that LFL has officially stated that Leia was referring to her real, natural mother. As bad as the setup was in the PT, the OT scene would suck even more eggs if Leia was referring to someone else.
When in doubt, just ignore the PT.
