Oh, shat! Completely missed this thread. Anyway, maybe someone's already mentioned it, but on the DVD documentary of Hitchcock's "Psycho", SW editor Paul Hirsch pops up with an interesting SW anecdote. Perhaps you're already aware of it, but he mentions how for the moment when the gang is hiding in the smuggling compartment on the Millennium Falcon, they used a cue from the "Psycho" score as temp music. When it came to actually scoring the movie, John Williams simply adapted the cue and left it in as an homage to Bernard Herrmann's work.

Also, the Criterion Collection of "Kind Hearts and Coronets" includes a rare hour-long chat with Alec Guinness from 1977. Of course, SW is mentioned towards the end and he briefly discusses how he feels about the film and relays his money anecdote (he says George offered him a 2% bonus, but when he bumped into Gary Kurtz, Kurtz said something like, "Oh, you mean the extra 1%?" and Guinness left it at that).
