I always thought Indy and his dad couldn't have been immortal because they left the temple. As the Knight said, the price for immortality was that they had to remain there forever. The other Knight left and died of extreme old age, which is what ADM touched on. Indy and his dad aren't immortal because they drank from the grail, but they could be aging a lot slower... Hence the possibility of an Indy movie in the present day. That would be an interesting idea, but I don't know how well it could be pulled off.
