By golly, I was going to put this tip into ADM's thread, but forgot. Saved me some carpal tunnel syndrome when ripping extras discs:
Change the default to Demux:
Tools -> Settings -> Stream Processing Tab
Put an asterisk in the demux box.
(IIRC, you have an asterisk to clear in one of the others).
It's been a while since I ripped, but I think that's the option that it forgets to obey, every so often. So you have to check to make sure.
