I was going to start a new batch today (Winter What? - a darker spiced Nut Brown) but for the first time even my yeast did not start to multiple in the starter wort (the first time I had a slow start with Wyeast Propagator!!) so I'll buy some pitchable on monday.


The ISOLATION AMBER gets racked into the secondary fermentor tonight!

sweet. beer bro rikter: have you used Rogue's Pacman yeast? just kegged a black ale. Man this yeast is yummy! Already tastes really good and it is currently flat and warm. i'm no good at naming beers, though. i was thinking of calling it black ice brew.

NOT yet, I need to order that off the net but there are a few that I want to try so I think I'll order some good yeast soon. I just killed a Wyeast London Ale so I had to substitute Mutons Ale Yeast - I got distracted and poured it into the hot starter wort! DOH!!

I also just wrapped up and experimental spiced holiday brew with 12.6 pounds of fermentables , I think I’ll call it WINTER WHAT?.

i really need to invest in a wort chiller. i do most of my work with the wort outside (I actually use one of those outdoor turkey fryers from walmart. hold's 6 gallons. after an hour of boiling it's perfect at 5 gallons). it's a pain, though, to bring that hotass wort indoors to the icefilled tub. I think i'll get one when I order some more yeast, which will hopefully be soon.

I just made a nice apple brew with a touch of pine needles. surprisingly good. i think the secret was I put a bit more hops than what I'd normally use in this type of sweet drink. not too sweet, not too hoppy.

- That apple brew sounds tasty! I uses a 4 gallon and sparge with a bit more then a gallon to top up the 5 gallons myself and cool in my iced sink. We may be moving soon so I may keep an eye out for better room so I can start to brew whole grain

EDIT - I'm also gonna get some Pacman before it's gone (2 or 3 of em')

WELL, So far I've been lucky enough to have gotten great reviews on this one from a few of our local brewmasters and local drunkards. And it has even been suggested that I enter this one in a few comps in the "Experimental" categories. So I'm kinda keeping this one under wraps

BUT, it's got 14lbs of fermentables with 6 types of malts, a random mix of spices & herbs and gave a reading of 1.072 and spent three weeks fermenting.

ahh.. secretive. totally understand.

The reason I ask is I'm a REAL fan of dark ales, but can't make them worth shit. I'm usually pretty good with fruity ales (for the wife) and ambers. I don't even bother with pale, except hefs.

I still try, though. I have a black fermenting as we speak. we'll see how this one goes.
