There are so many different species and examples in the PT that if they had everyone speak an alien language, nearly all the movie would be in subtitles, and most of the audience wouldn't put up with that.

Do you find it amazing, like I do, that Han Solo apparently understood the Common Language, Wookie Language, and Huttese?
Not really. He's a smuggler by trade, so he needs to know a lot of dialects. Huttese is one of the major languages of the underworld, so it's no wonder he knows that one. Wookiee is a bit more complex obviously, but given enough time he probably figured out what most of it meant.
