Ultimate Fantastic Four wasn't too bad in the beginning, but by issue 25, it was pretty much right back to where the original comic series was, as in they have acquired all their signature technology (Fantasticar, H.E.R.B.I.E., suits, you name it). Check it out, but don't expect to be floored.

Ultimate X-Men also has a few interesting arcs, like "Cry Wolf", that one with Mr. Sinister, "World Tour" (and the issue after that with Prof X leaving) and "Blockbuster", which is basically a non-stop Wolverine beatdown for six issues. All in all, though, it's kind of goofy. There are a couple stories ("Phoenix", "Fire and Brimstone") which are just plain silly.

Ultimate Spider-Man is interesting enough (and has enough plot twists) to satisfy anyone. The "Hobgoblin" or Black Cat/Mary Jane depression arcs are pretty good stories.
