I believe the version of X-Men in the set is the original version (which included deleted scenes, the "Mutant Watch" tv special, Bryan Singer on the Charlie Rose show, galleries, animatics, and some other stuff). X-Men 1.5 is a two disc set which features DTS sound, branching behind the scenes vignettes & deleted scenes during the movie, commentary, a few hours worth of documentaries, and other goodies. And yes, X2 was originally released as a 2-Disc Special Edition. That was before Fox started playing their little games. It might still be available, but I usually just see the single disc re-release floating around these days (which I assume is just disc one of that set).
A word of wisdom for anyone that cares about special features: if the initial release of a blockbuster movie isn't a 2-disc set or isn't loaded to the gills with extras, you can bet there's a special edition coming out in a few months. These days, a commentary and deleted scenes is considered a bit light.
