Flopped shots are a good thing. In this case it maintains continuity of direction, which I think is more important that continuity of oil stain. The first shows 3PO looking the left, and so does the second. If you switch them around, it'll create a discontinuity - perhaps not something everyone will notice, but that's why the shot of 3PO was flopped all those years ago.

Actually with this scene he still looks in the correct direction. Removing the Dragon skeleton has created a different camera angle so it still maintains directional continuity. Not only was the original shot flipped but if you look closely at the Dragons skull you can see that the 2 flip shots were filmed from the opposite side of the dune, which is probably the reason why it was flipped in the first place.
