If you don't have the OOT on laserdisc, there is no excuse not to get it officially on DVD. Then if you want to upconvert what they've made available more power to you. That's why this thread is here ... to help with that.
And, not to derail this thread, I say to hell with the DMCA. That is not even close to the spirit of copyrights and fair use. I've bought this set officially on DVD. I'm upconverting it and modifying the soundtrack using only elements provided in the two releases (obtaining the missing 70mm lines that are provided in the SE). So long as the methods I choose to do this don't involve making minors work for ten cents an hour, it shouldn't make one bit of difference what those methods are.
But back to the issue at hand: Buy the set, and you're not only removing risk to yourself, but you're simply doing the right thing in the spirit of the law. It'll also give you a reason to bitch if they do release it in anamorphic next year. After all, those who do not purchase a product do not reserve the right to complain about it.
