The 5.1 is just an upmix. I couldn't care less, I always prefer the original mix. Maybe cleaned up, but not changed.
You could take the video and put it together with the criterion bonus stuff, but you'd probably end up having a less good picture then the criterion because you have to recode it in order to convert it to NTSC.
