If someone were to take the official DVD set and remove everything but the movie itself and the menus (which are very cool and should stay ), and then replace the English DD 2.0 soundtrack on the DVD with the PCM soundtrack from the Definitive Collection, it would make for the ultimate Star Wars DVD set till the XO project is ready. Those extras and foreign languages are a complete waste of space that could be used to squeeze in the PCM soundtrack. Or if the PCM soundtrack wouldn't fit without having to lower the bit-rate Lucasfilm used on the video (which would not be good to do), then convert the PCM to straight 448k bit-rate DD 2.0 for a DD 2.0 soundtrack with the maximum quality that DVD can support. That would definitely fit onto the dual-layer DVD.

The only thing is that you would have to be very careful to make sure the replacement soundtrack was in perfect sync with the video, exactly the same synchronization as it is now on the official DVD set. Other than that, it should be no problem.
