One of the things that bugged me about the continuity between the PT and OT was that the PT's fighter ships, even Anakin's junk pile podracer of course have better displays with all sorts of lcd screens with information on them than any ship in the Ot including the millenium falcon. Of course it's just another sign of how GL didn't really care about continuity details like that. So I think it'd be cool to replace every single display screen in every ship with some updated version. Maybe instead of triangles flying around a grid, they can be actual ships flying around a 3d millenium falcon diagram?
