Grint hasn't really gotten the chance to do much, either. Columbus kind of reduced him to wierd facial expressions.
And they've sort of kept that in place even after Columbus left as director, presumably because this is now how the movie audiences see Ron and they don't want to change that perception. I can only assume they reduced Ron to the quote "weird facial expressions" because they thought little kids would find that funnier than the one-liners and quips Ron is better known for in the books. I don't find his weird facial expressions all that funny though, and I think in dumbing him down on film they kind of threw off the trio's chemistry, and to be honest, it feels like Ron's been getting dumber with each successive book, kind of like Homer Simpson.
But that's just me.
