Hmm, yes, the Jedi do seem to be nature oriented, but that understanding of nature is not limited to living objects. They also understand how the force relates to inanimate or technological objects. They don't have an aversion to machines (their light sabers for instance). Plus, Coruscant could be very old and have an ancient temple on it. And at the very least, people who are sensitive to the force can pop up on any world, and you'd need places for them, especially in the arguably most populated planet in the republic.
