If you look closely, he face has been "flattened" a bit in Empire due to the reconstructive surgery... which, I believe, is the reason they included the wampa scene in the beginning, to explain his scarring.

But I agree, it was never that noticable to me either. Though the damage to his face is much more noticeable now; he looks old beyond his years I feel.
