Mac the Ripper should serve you well, it's what I use. If you're not sure on what the best settings are, try reading the help? I'm not being facetious, just saying. Read up on what means what on the internet if you have to.

As for converting AC3, the only (free) program I found for that on the Mac is mAC3dec. Outputs to AIFF, WAV, PCM, MP3, MOV. Very simple and easy to use. It just does it.
