Well, you could suggest that by the time of the Romulan Wars, space ship production was more important than certain conveniences, so they left off the viewscreens to make more ships faster.

As for Nemesis... I actually liked it a bit better than "Wrath of Khan" though it may be because I'm more partial to the TNG crew.
