Well, for 3D fighters, Virtua Fighter and Soul Caliber can't be beat. They (and more prominently Tekken) have stolen some thunder from 2D fighting games in recent years. Pretty much the only way you have a 2D fighter do well outside the niche markets anymore is to have it on a handheld or as part of an anthology or crossover.

ON the otherhand, I've heard good thigns about the Guilty Gear series.
