I saw this online the other day - and thought it worthy of including here. One likely for the ‘jarring issues’ / ‘retcons’ category…
The ‘Chosen One’ Prophecy…
'The chosen one prophecy. Non-existent in the OT. Literally never mentioned once. The prequels had to end with Anakin falling to the dark side and becoming Vader, so the prophecy being added had to end in failure in the prequels, and yet it relies on the “fulfillment” to be Vader killing Palpatine in ROTJ, which again makes no reference to this at all. At the end of it all, Anakin fulfilled the prophecy by ending the Sith but not before he destroyed the Jedi and ruled as Sith for 20+ years.
So, the prophecy that was created for the prequels, ends in failure and retcons a moment in the OT to be the fulfillment whilst showing that Anakin essentially ended his own mistakes but did more bad than good along the way. It’s was absolutely dumb to shove a chosen one prophecy into the prequels. George only did it to retroactively make Anakin more important to the story than Luke.’

Although the whole ‘Chosen One prophecy’ seems to a somewhat bombastic, vague and fluctuating storytelling device… given if George Lucas had actually made his Sequel Trilogy… he stated he would’ve made Leia ‘ending up being the Chosen One’…
