There are just so many of those type of interviews… a master list of them would certainly come in handy; a July 1981 interview where George states the planned Prequels are about Ben Kenobi:-

I’ve only had time to read the insightful & informative John Dykstra interview so far - though there are a number of interviews there from many of the creative talents that worked on Star Wars (before the PR shine, gloss, and rewriting of official history etc)…
