Someone did this already. The problem would be getting the go-ahead to release the footage.

The guy shot the footage, and the behind the scenes stuff is in the documentary, but for legal reasons he couldn’t release the actual scene.
The only way he could have done so is with special permission from Lucasfilm. I certainly hope that we can see that version of the scene at some point, especially in light of David Prowse’s death.
