Spider, in order to capture the audio, I'm recording the digital out straight into my sound card into PCM format. From there, I can create both a PCM track and a DD 2.0 track for my DVD's. I'm not going to bother trying to capture the CC subtitles. Zottig has agreed to help me create an English subtitle track for my DVD's. The best way to do this may be to just get an existing subtitle file and convert it to .sst so I can author it with Scenarist.
