Because Rey’s father was a clone of palpatine and was obviously show to be young. Unless I’m not remembering something correctly.

You’re right, but I think it’s a case of the needs of immediate visual storytelling trumping internal Fridge Logic continuity. The audience needs to immediately understand “ah, these are vats of cloned Palpatines,” which wouldn’t be conveyed if it was a bunch of clones of some young bloke we’ve never previously seen.
