Of all three, the one I would keep would definitely be McDiarmid.

The corrected music cues in TESB - preferably all of them but if I had to choose one, probably the one right after Yoda says “That is why you fail”
I hate the Disney Channel Live Action Universe
I prefer YUB YUB, but i don’t hate the victory celebration music. I also kind of don’t mind the Jedi Temple and Coruscant shots. They just slow down the pace of the film. The original ending is much more tightly edited shot for shot. I would also argue the story is about Luke and his circle of friends and family and not about opening up these wide vistas of a larger galaxy. Those shots are very much in vogue with the prequel esthetic and establishing that.
For Star Wars, I would keep the removal of the cardboard cutouts in the throne room scene, and if I have to pick something more significant, I’d say the Biggs scene because it falls more under the “directors cut scene” category (instead of unecessary bad CGI).
For Empire, I would keep the added samoa scenes because at least they used a costumed person instead of CGI like most of the additions and alterations.
Then for Jedi I would keep the cleanup of the rancor scene, but if that doesn’t count, then I’ll say the blinking ewoks.(it’s hardly noticeable)
(I really don’t like any of the changes that much if you couldn’t tell. Yub Nub rules.)

Let’s say Disney is going to release something close to OUT but there’s a contract clause with Lucas or some bs requiring them to keep at least one SE change. This, of course, would never happen. However, if this hypothetical situation were real, which SE change would you be the least offended by if they kept it?

Yes! We would have to say the fly over Cloud City by The Falcon would be the one we would like to keep. The Flyover gives a scope of the city buildings that you dont see in the original version.

Forgot about that. The exterior Cloud City scenes were quite nice I always thought. Dare I say that ESBSE would be almost good if Lucas had not included the damnedly pointless sequence of Vader returning to the Executor?

I’ve never liked the Cloud City SE scenes because there’s at least one major instance of simple sloppiness where they couldn’t be bothered to keep things consistent (the disappearing window behind our heroes when the stormtroopers arrive behind them after Vader shows up).

ROTJ - entrance into mos eisley there are 2 droids fighting. It’s a little slap stickish, but don’t mind.
ROTJ - end celebration, but with older Anakin as a force being (whatever), not the kid from ep1
ANH - recomped speeder
ESB - new wampa shots
ROTJ - removed Vader eyebrows

I agree on the Cloud City windows but if I could add anything to the special editions I would really like the scene where Luke is with Biggs on Tatooine before he leaves to join the Rebel Alliance. This would also make their reunion more meaningful. I don’t mind the reunion scene either so I wouldn’t be opposed to leaving that in.
That is tricky… but if I have to choose? It’s the shockwave rings. Are they ridiculous? Yes they are but honestly they’ve become so well-known that I find that going back to the original effect I find it just looking unfinished without it.
