There are about a million DVD editions of this film and some of them are old releases with pretty bad transfers.

The original prints of Night of the Living Dead were shot on 35mm and looked very nice. If you don't already, go out and buy the Elite Entertainment version of Night. It's the best transfer you can find of this movie to date.
As for the multiple releases of this movie, it's because the movie was released without a copyright. Someone messed up and now it's a public domain movie. You could put out your own DVD of it if you so felt the need. George A. Romero has never made a dime off of that movie.
