To help understand what the Jedi were like look at it as a rabbi with the honor code and sword fighting techniques of a Samurai.

Another thing to reconstruct is the line “I haven’t gone by the name Obi-Wan since, oh, before you were born”. This would mean that Obi-wan left the Jedi Order before the fall of the Jedi and would explain how he survived it.

I disagree. Yes, it’s a plothole, but it wasn’t the prequels that made it. Episode 6 clearly shows ghost Anakin in similar attire as desert Obi-Wan, proving they were always intended to be the Jedi robes. Even if it still doesn’t make much sense, You can’t blame the prequels for this. The mistake had already been made in 1983.

A case could be made that Anakin’s Force ghost chose to adopt the same regalia as Ben in a bid to come off as benign as possible to Luke, not because he wore them in life.

From what I understand, most people believed Force ghost Anakin was just wearing Tatooine robes because he also was from Tatooine, not because it is a Jedi outfit.
