It doesn’t bother me. It’s safe to assume it’s a different time of year (and hence the angle between the planet and suns could easily be quite different, resulting in greater separation in the sky) and a different latitude (and hence the angle between the ecliptic and the horizon would also be sufficiently different).
Not saying it would be implausible for it to more closely match the sunset seen in ANH, but there’s no astronomical reason it would have to. For my 2c ROTJ calls back to ANH enough already. :-p
