I wanted to try to make Dooku look younger since it was 10 years before we see him in AOTC. Along with that i wanted to show him in jedi robes, not in what he wears in AOTC. So when you see him in AOTC, his older look, shorter hair, and clothing difference helps visually convey his break from the Jedi.
