What are you using to play it? Some players can’t deal with the DTS-HD MA audio that the primary tracks are encoded in, so it might be defaulting to one of the non-English Dolby Digital tracks.
Try changing the audio track and seeing what shows up, or trying a different player - if you’re using a software player on your computer, something like Windows Media Player is not ideal, I’d recommend either MPC-HC or VLC (others have recommended MPV, but I haven’t used that one myself so can’t comment on it).
You should also be able to put the MKV file on a flash drive and plug it into your Blu-Ray player, or the USB port in your TV and play it directly that way. BR player should read DTS-HD MA just fine, the TV option is less certain. I don’t know about Xbox’s capabilities, but I know the PS4 doesn’t support DTS on MKV/MP4 video files.
