Question about video editing - mixing the new with the old

I'm definitely an old-school, Greedo-shoots-first Star Wars fan, but I also appreciate some things in the special editions, like the improved sound, picture, and explosion effects (Alderaan, Death Star(s), etc.)

My question is, is there a way to combine the original LD/DVD transfers with the newly-released, official DVDs and make a custom set? If so, what software would be needed?

I would try to keep as much of the remastered DVDs in the project as possible, while replacing or deleting certain scenes like Greedo shoots first, Jabba's palace, Anakin's ghost, and the Ewok scene at the end of ROTJ. Most other things I can deal with (Mos Isley is iffy...Mos Isley Jabba would DEFINITEY have to go).

I'm currently a new IT multimedia student, so I can get any necessary software at a discounted price.
