In all seriousness, say what you will about the acting in the prequels, the few fan films that I've seen still don't hold a candle to them in the acting department (except Troops). Lost in Translation they ain't, but a lot of the fan films I've seen have come off like bad high school plays.
I do find the dubbing idea intriguing, if you think you've got anyone who can pull off characters (and I take a certain sick amusement in the idea of billing Biz' in the credits of edits that he has bashes

). There's not a lot of characters to redo. Nute, Rune, Lott, Jar Jar, Tarpals, Nass, the pod announcer, & San Hill. I do think EP II would be a far easier undertaking as a starting point than EP I.
I would probably still keep the original reversed audio as a secondary track on the final disc, if this were to work out, for historical purposes.
