It's the same reason that the computer graphics in ANH are crappier than in TPM. The technology got better.

Or - there's no sound in space.

Seriously though, if one can ignore the lack of sound in space and accept that the Force can make people float and remember people they never met, I think mic clicks are the least of the problems.
