probably cause it makes no sense? and makes the character look weaker than he already is. I know people say its cause of Mace Windu force crushing his trachea or something, but honestly I saw Clone Wars and didnt even pick up on that till someone said it (and still only vaguely remember the scene). So what do the people think that have never seen Clone Wars? I was expecting it to go somewhere, like some sort of weakness of his would be exposed/realized by it leading to his defeat...but nothing came of it.

In my opinion, if you saw Chapter 25, it would be kind of hard to miss, since Grievous was fine since Chapter 20, and as soon as Mace hits him he falls and starts coughing...

Whether or not you know the plot reason, I think it should be kept in. After all, if Grievous is a foreshadow of Vader, than he coughing should be kept in since it's a foreshadow of Vader's breathing.
