Great idea!
I’d look at what Christopher Nolan does in his films with IMAX. Normally the IMAX sequences are the most spectacular or exciting parts of the film, plus the opening and much of the ending. I would suggest for a potential project utilising this concept, that you identify sequences in Star Wars where you can trade off exciting action sequeces Vs. ease of open matte recreation. i.e. parts of the film that would benefit from increased image size, but where the recreation can be effectively realised. I’m no expert with AviSynth, but I would imagine star fields might be the place to start. Nice work 😃
