Don’t watch the prequels at all. I honestly don’t know why people feel the need to include them. Even the best edits can’t add anything to them that’s needed to make them better, and can’t remove everything that’s bad, they can only rearrange stuff, and they’ll always be crap. The best part about it, is that they truthfully don’t need to exist. The story starts in Star Wars, and is rightfully continued in The Empire Strikes Back, and that continuation is concluded well (kind of) in Return of the Jedi. Just stick with those, because the prequels don’t add anything to the story, they just take away.

EDIT: Okay, I just thought about my statement that edits can’t add to the film, and that’s not really true, but the point I was making is that anything any fan-editor can do to any of the prequels can’t save them from their underlying disease. They were too far gone already when George started writing (which for ROTS was partway through shooting and that makes it much worse).
