Bear in mind this is an Abrams film. They created one hell of a smoke screen around the identity Khan leading up to Into Darkness.

What would be the point of Snoke having a secret identity? What would it add to his character?

Sorry to make it a prequel comparison, but think of Count Dooku.  The entire galaxy knew he was the Separatist leader, enemy of the Republic and Jedi.  But behind his public evil face was even deeper darkness: his allegiance to the Dark Side and Palpatine/Sidious as Darth Tyranus.

So Snoke could, publicly, be the leader of the New Order as Supreme Commander, with his "enforcer" Kylo Ren doing his bidding (like how Vader was publicly seen as Palpatine's enforcer).  But behind the scenes, he and Kylo have this deeper Dark Side/Sith mystical power agenda with their own Sith names (or, at least, Plagueis).

Or all of that could be true anyway, just minus the Sith names.
