It's also possible that the widescreen scenes in the documentary further matted the original widescreen frames. There's a lot here that doesn't add up and probably won't add up unless an original film print is found. If the movie was shot open-matte, as the video to documentary comparison would indicate, why would they even do a pan-and-scan version at all? Even if it was shot in scope, having more information at the top of the full-frame version that is not in the widescreen version makes no sense.
