I'd also love to see some of these ideas used in Episode 7 and beyond. I'm sure Thrawn won't be in the new trilogy, but the idea of building up the beginning of the New Jedi Order and dealing with the remnants of the Empire could be strong plot lines. Also a more interesting use of clones than in the prequels would be more than welcome

I'd say somewhere circa 1997 is a safe place. That was an exciting time to be a Star Wars fan. Before the dark times... before the major revisions.
Even the SE's were a lot of fun that year, I loved going to the theater and seeing them on the big screen. The changes were a fun little bonus, movies we had seen over and over and over again, now with some fun little extra bits. Of course, back then we thought they actually were special editions, and not the first step into a disappointing future for the franchise as well as the first draft of the only versions we'd eventually be permitted to see.

I suggest you play Jedi Knight 2: Jedi Outcast and Jedi knight: Jedi Academy video games. They deal with both imperial remnant and new Jedi Order. In my opinion they are the best post-Endor EU material.
Prequel Trilogy was supposed to be a story about a good man turning bad. In reality, it is a story about how a complete jerk (PT Anakin) turned into one of the best characters in film history (OT Vader)
