Jedi KnightWeren't they on Demonoid which is pretty much never coming back.
I wonder if the non miami versions of building and jedi are even still on myspleen. Never mind if they are NTSC or whether or not they are DVD5 or DVD9. Plus begins and Building and Jedi are not updated with the real deleted scenes from the blu ray.
They are what was available at the time. A sort of time capsule as i believe Jambe remarked, he has no plan to revisit them as far as i know.
Sorry i cannot help with the DVD's as i have the old version of building empire in PAL format and at this point it probably is not copyable. Never did get a snail mail copy of begins i had a 400 mb avi that i have long since deleted.
Returning to Jedi i do have but it is not a true NTSC version, its the tricked disc version not a true pal to ntsc conversion.

The changes that George Lucas has made over the years to Star Wars is the equivalent of someone keying your car. On an intellectual level, you know that the car still works, and its only marred a fraction of a percent of the paintjob.
