The Interweb is a Series of TubesIt should be, as DVDs have higher chroma resolution than LDs and they use YV12.
If you plan to IVTC: Capture in 4:2:2 (or better) and then convert to YV12 prior to the final encode. IVTCing YV12-captured material destroys the chroma of the original "C" frame of a 3:2-pulldown'd NTSC source.

Better Grumpy than DopeyI agree with AntcuFaalb, you should capture YUY2 (4:2:2) - interlaced YV12 can be the source of all sorts of confusion.
Also if it's film-based material you are archiving then carrying out an IVTC and encoding as progressive YV12 would be more efficient.
