It is indeed an excellent video, and a great way to show the uninitiated what some of the problems are, and what a gargantuan task it was fix them by combining all those different sources together.

As I'm the one who uploaded your Video Sources Documentary to YouTube, I'd be happy to try re-encoding the video at a higher bitrate and upload it again. I'm not encoding master, though I hoped my conversion of your .mkv to an .mp4 container (to allow uploading to YouTube) using the program Handbrake preserved sufficient quality. Unfortunately, I think most of the lost quality is due to YouTube's re-encoding rather than on my end.
Still, I agree with yoda-sama; I think that watching the video at 720p on YouTube shows more than enough detail for your hard work to be appreciated, though even watching lower resolutions allows for the novice to become aware of the incredible effort put into this project. Regardless, I provided plenty of information, including your download link for the video on uloz.to and a link to this forum thread, in the description of the video on YouTube; so those who are truly interested will be able to easily find a better copy.
What limited feedback the video has obtained on YouTube has been generally positive and thanks you for your work, and I've pointed at least one person, who contacted me in response to the video, in the right direction on how to obtain the Despecialized Editions.
Once again, thanks for everything you do! Please let me know if there's anything I can do to help.
Actually, when I process my camcorder videos with Handbrake I always have it output to .mkv (my preference between the two), and upload it as such straight to youtube. So, in the future, you need not worry as much about what container the video you want to upload is in. I can understand the confusion, though, since, if nothing else, youtube seems to convert what they receive and store it in a .mp4, which is what they'll let the uploader download it back as...

My daughter is growing faste, and I don't own a VHS anymore... I want to show her the real deal in a couple of years.
So I googled "starwars original version" and voilà
v2.1 is a bitch to get my hands on tho...
Since we there, is the french soundtrack included on v2.1 or is that only on v2.0 ? And is there any (easy) way to mix the french soundtrack with v2.1 (if I ever get my hands on it)

The French audio is unfortunately not included in the V2.1 because it's a lighter AVCHD version, foreign languages are included in the MKV versions which are a lot heavier (V2.0 for example) so you'll have to wait for the V2.5 MKV to have the French audio included.
You can also use MKVtoolnix to mux the V2.1 AVCHD file with the French audio track so you'll have what you are looking for.
By the way, I have the French audio in higher quality if you want, just send me a PM and i'll be able to explain you how MKVtoolnix works if you're not familiar with file muxing ;)

The 2.0 MKV has a lot more audio tracks. I imagine one could remux a different audio track into 2.5 if they wished.
Also patiently waiting for the "3.0" action, though with getting menus involved, I only hope it's not something too tedious/messy to make happen. I think that once the final file is done, adding a quick menu, adding the slideshow(s), etc. it shouldn't be too hard to build, though blu ray authoring seems like a lot more of a PITA than DVD is/was.
Also very exited to see a "matching" set of updates for ESB/ROTJ some time after this gets the final touches. The Hoth test clip looked pretty good. Will comment over there at some point with my thoughts on that.
...not sure what # we're on now, but I'll go "one louder" than whatever the last # was for an audio featurette.
