I agree with Stinky Dinkins, I would rather not wait years for a Blu-ray release. I have several people I’d like to give copies of v2.1, none of which are technically minded. For Joe 6-pack, menus are very important.
Also, I like Murry Sparkles’ suggestion of an all-encompassing trilogy wide Bonus Disc. Lots of Hollywood movies put only the film, audio options, subtitles, and maybe a trailer on Disc 1. Disc 2 and 3 have all of the extras. That would also give you time to complete the extras to your satisfaction.
This is just my two cents, Harmy. Do whatever you think is right. =D

That sounds like a practical plan, Harmy. Remuxing the MKV with tsmuxer is as easy as pie, and my suspicion is that the average person would forgo the menu and lossless audio to have 2.1 without a longer, indeterminate delay. I suggest you release the MKV.
EDIT: This might also take the pressure of releasing 2.1 (which I'd imagine you are feeling to some extent) off a bit.

The thing is on one hand, I want the BD So bad that I made a temporary one on a BD-RE, that said without anything else than the movie itself. On the other hand, you're a college student, and I myself am a college dropout with the irony that I left everything for studying, ending up with health issues and no diploma. Go for the best, Harmy you already blessed us with the mkv, maybe someone else could do the BD itself (even if it's just with menus), this person could even use the test animation you posted here and that is beautiful. Like others suggested, you could also just make an extras BD once the trilogy is done. After all, I bought the Star Wars 9 disc BD set mainly because I wanted the extras discs (and because I like Episode 3 even if I hate the other two prequels). I'd even love to contribute by doing the BD myself, but I have no clue on how to make a BD menu. Anyone?

I have no bluray player/burner anything so that format is meaningless to me. I vote for a 2.1 MKV or DL-DVD iso, assuming 2.1 is close to done. Don't rush on account of us.

I imagine Harmy's logic about the Blu-ray release is that it's far easier to take a BR image and convert it into MKV/AVCHD/etc. than it is to go the other direction. In this sense, it's the "better" format, as it's the most complete/final, and everything else simply involves some reduction of that release.
I'm fine with any release, but I'd prefer Blu-ray because I'd like to see what Harmy does in terms of setting up a menu and/or chapters (assuming he does either, which he may not).
Also, please note that VLC and other players should play a BR image without modification. i.e. No burning required.

My
opinion ought not count for much since I'm a lurker on this board and not a
contributor, but I'd vote for an AVCHD and MKV of Version 2.1 now. (I personally prefer the AVCHD format, since,
when burned onto a Blu-ray disc, is more broadly compatible with Blu-ray
players than MKV – but that’s neither here nor there). The Blu-ray seems to be the definitive
release, the signature edition, the culmination of all of Harmy's blood, sweat,
and tears. (Not to diminish the importance
of all the crowd-sourced help given by folks on this board.) As such, Harmy ought to have the time to do
it to his "complete satisfaction.”
And if that means more time to get all the elements just right, and more
time to perhaps create a cohesive unity across the trilogy, I personally am
okay with that – it seems that Harmy deserves to have a final edition that he’s
100% proud of. Just my two cents.

I was really wanting the Blu-Ray release soon but after thinking about it, i would rather the movies have all your time and attention and be finished quicker, rather than let things such as menus/speacial features etc slow down progress, so i am all for the MKV and AVCHD.

Jedi KnightI can see waiting to release the blu-ray until all menus and extras and so on can be included if you want to realease only 1 version on blu-ray. But will there be a full size 720p mkv near 25 gig in size (single-layer blu-ray disk size) released? This way, high bit rates can used in the video to preserve as much of the quality from the master file as possible, and then that maximum quality mkv file can be burned to a 25gig blu-ray disk that will play on any set top blu-ray player hooked up to an hdtv.
Also, I think hairy hen is close to releasing his new 70mm soundtrack restoration version in lossless. :)

I really don't think it's necessary for the video file to get larger that it's now. The gain in quality would be negligible.
